Marinated Grilled Blackbird Farms Beef Heart , Roasted Red Beets, Horseradish & Beet Juice Vinaigrette
Its so exciting to be back in the kitchen creating dishes and playing with recipes and ingredients again!
Today I was working on a dish for a cookbook project I have been asked to participate in. The cookbook, Boston Homegrown (written by Leigh Belanger) pairs a select few chefs with local farms and certain seasons. I naturally asked to partner with Blackbird Farms and my dishes are based on Beef & Eggs, both Blackbird Farms, both equally high in quality and taste.
The dish I was playing with today....Blackbird Beef Heart & Beet Salad , or as I was referring to it today....A Study In Red. A few different presentations I attempted today..I'm not the best photographer so trust me they looked and tasted great!
