2008 Sun Wine Fest Chef Showdown Winner

Well I did it, the 2008 Mohegan Sun Wine Festival "chef showdown" competition was a fun and also challenging iron chef style competition that gave me shrimp and smoked sausage, a list of mystery ingredients and 30 minutes to impress celebrity judges Roberto Donna, Johnny V., and a few other high profile food service professionals. In the end my Smoked Sausage Carpaccio w/ Chipotle Shrimp Ceviche came out on top.


The dish that won me the spot in the finals was a cinnamon dusted shrimp, served over smoked sausage, hedgehog mushrooms, and caramelized onions sauteed with spaghetti squash and finished with apple cider "air" using soy lecithin. What a great weekend and not bad to walk away with $3500 dollars and a two night VIP stay at the casino......now when my wife and I can get a baby sitter for two nights for our children we will enjoy the prize........
